GRITS

[Kerminator]

 Grits is a Dixie thing...  But what are grits, where do they come from, never saw a grits plant have you?

 Well here is an  Ole secrete receipt:
 
  Hominy Grits

  You have to start with some shucked dry corn kernels...  Like what you would feed hogs...

  Put in about a third of the amount of hominy as it swells two thirds size when socked in a pot of hot water...

   Place in a small cloth bag or sack of hard wood ashes, (Now you know why you save the ashes) in a large pot half filled with water and boil till the skins slips off...  

  Remove and wash in clean water;  then refill the pot half full of water add some sea salt (1/2 Teas) and boil until tender, about 30 mins...  
 
  Remove, strain then beat with a good hominy beater, if you want grits let dry until ready to use...
